Pickleball Is Here!

The Currituck County Senior Center in Partnership with our Parks & Recreation Department will be offering
“limited capacity” Pickleball
on Monday & Wednesday
each week.

Pre-registration for each day is REQUIRED.
You must call the Senior Center at 252-232-3505 to register.

COVID safety measures and Governor mandated restrictions will apply.

Sign ups will only be held on the Friday before the following week games.

Ginger is a time-honored root of Zingiber officinale plant.

Ginger originated from Asia and has been a known powerful plant in the continent.

In China, it has medically helped in the digestion of food, stomach ache and nausea for over 2,000 years!

Oatmeal Brulee with Ginger Cream

Ginger Cream
  • 1/2 cup Heavy Whipping Cream
  • 2 slices fresh gingerroot
  • 1 cinnamon stick
  • 1 tablespoon grated orange zest
  • 3 tablespoons maple syrup
  • 1/8 teaspoon nutmeg
Oatmeal
  • 4 cups water
  • 2 cups old-fashioned oats
  • 1/4 cup chopped apricots
  • 1/4 cup dried cherries, chopped
  • 1/2 teaspoon salt
  • 3 tablespoon brown sugar
  • 2 tablespoon butter, softened
  • 1 cup fresh/frozen unsweetened Raspberries, thawed
  • 1/4 cup sugar

  • In a small saucepan, combine the cream, ginger, cinnamon stick and orange zest; bring to boil. Reduce heat; simmer, covered for 10 minutes. Remove from the heat; strain and discard solids. Stir in syrup and nutmeg.

  • In a large saucepan, bring water to boil; stir in the oats, apricots, cherries and salt. Reduce heat to medium; cook 5 minutes, stirring occasionally. Remove from heat; stir in brown sugar and 1/4 cup ginger cream. Let stand, covered for 2 minutes.

  • Grease four (4) 10oz. Broiler-safe ramekins with butter; place on a baking sheet. Divide raspberries among ramekins. Spoon oatmeal over raspberries; sprinkle evenly with sugar. Boil 4-6 in. from the heat for 7-9 minutes or until sugar is caramelized. Serve with remaining ginger cream.
