Currituck Senior's ExercisingThe Currituck County Senior Centers; Barco, Knotts Island and Powell's Point are places designed to give Senior Adults in Currituck the opportunity to meet other seniors, receive services geared towards seniors and participate in activities that will affirm their dignity and self-worth.

With that in mind each month the staff produces a newsletter to inform citizens of available programs for that month. Please take the time to read what the Senior Centers are doing this month. 

When we all work together the senior centers are an "enjoyable and a happy place" for EVERYONE!

May is... Better Hearing & Speech Month
"Communicating Your Needs Effectively"


At various points in each of our lives, we find ourselves in situations in which we need help. When we do, we must figure out how to find that help and how to effectively express what we need. When someone has hearing loss, expressing those needs can be even more difficult. What can you do to help yourself and others understand how to help you?

First, do not be afraid or embarrassed to admit you need help. Everyone needs help at some point. Needing help does not mean you are incapable. However, others cannot read your mind and probably do not realize that you are not understanding.

How do you communicate effectively? Use the following communication tips:
?? -Look at the person you are talking to and ask them to look at you.
?? -Ask the individual to speak slowly and clearly.
?? -Do not bluff when you do not understand. In other words, do not nod and smile          or do other things to cover up that you do not understand.
?? -Ask specific questions to get information you may have missed. Saying things          like "What did you say?", "I can't hear you.", "What?", etc. simply causes the          other person to repeat what they said nd you still miss part of it.
?? -Ask the person to rephrase what was said. You may also ask him or her to          write down any important information you need to remember.

Second, make use of other resources to access available assistance. The Division of Services for the Deaf and the Hard of Hearing is one of your resources. We can assist you with additional resources as you advocate for yourself to achieve effective communication.

In conclusion, take ownership of your communication needs in advocating for yourself. The only way people can help you is for you to communicate your needs. You may have to be persistent and consistent in requesting assistance. In the future, you may be able to help someone else because you received help.

Cost is $739.00 per person, double occupancy. There is a $100.00 deposit per person due by Friday, June 9th. Travel Protection can be purchased at an additional $79.00 per person, double occupancy.

Cooking with Latesa...

                  Poblano Chicken Enchiladas
  • 2 teaspoons vegetable oil ??
  • 1 red onion, sliced ??
  • 1 poblano or pasilla pepper, sliced ??
  • 1 cup corn ??
  • 1 (4 oz.) can sliced green chiles ??
  • 2 cloves garlic, roughly chopped ??
  • 1 tsp cumin 
  • 1/2 tsp chili powder ??
  • 12 corn tortillas ??
  • 1 rotisserie chicken, shredded ??
  •  2 cans (15oz.) Red Enchilada Sauce ??
  • 1 1/2 cups shredded Monterey jack cheese ??
  • 1 1/2 cups shredded cheddar cheese
    Toppings; Sour Cream, Pico de gallo, chopped chives, fresh cantro   Chef

                   

Directions:      

Preheat the oven to 350 degrees F. In a large skillet, heat the oil over medium high heat.

Add the onions and  poblano peppers and sauté for 5-6 minutes or until soft.

Add the corn, green chili peppers, garlic, cumin and chili powder and sauté for a few more minutes or until the vegetables are caramelized.

Add the chicken and stir to combine.

Remove the vegetable mixture from the pan and set aside.

Pour the enchilada sauce into the same pan and reduce the
heat to low, allowing it to warm through. Pour 1 cup of warmed sauce into the bottom of a casserole dish.

To assemble:
dip a tortilla into the sauce then lay on a plate. Sprinkle a bit of each type of cheese down the middle, followed by some of the chicken mixture. Roll it up tightly, then place it, seam side down, in pan. Repeat with the rest of the tortillas.

Pour the rest of the sauce over the enchiladas, then sprinkle on the rest of the cheese.

Transfer to the oven and bake it for 30 minutes, or until hot and bubbly.

Remove the dish from the oven and garnish with toppings.

Serve immediately.

Staying active as we age can have its benefits! Light Exercising can lower the risk of
Diabetes and Heart Disease! It can improve balance, strength and reduce symptoms of
depression.

Start off by turning on your favorite music and sitting in a chair. Lift your legs one at a
time to the count of 10. Lift your arms one at a time to the count of 10. When you feel you are used to this, introduce more exercises to your routine. Soon you will be rocking to the beat of your music and improving your health all at once!
